End of Summer Peach Salsa

Today I’m excited to share a recipe with one of my favorite bloggers and friends – Alta from Tasty Eats at Home.  I admire her sense of adventure in the kitchen and her unique spin on food.  Most of all, her passion for good food is contagious – you can feel it through her photography and writing.  I think this salsa would be the perfect compliment to grilled pork or chicken…it’s going to make it on my menu plan.

When Amy asked me to guest post on her blog, I was honored. Simply Sugar and Gluten-Free is by far one of my favorite blogs, and since Amy and I live pretty close to one another, I’ve even had the privilege of enjoying her cooking first-hand, so I know she’s talented. The difficult part came in deciding what to post. What seemed “right”? After some thought, I decided I would write about one of my favorite food loves at the current moment – peaches.

Now that Labor Day has come and gone in the United States, summer is more or less over. Here in Texas, we have quite a few more days left where it feels like summer outside, though, and the farmers markets are still peddling the last of summer’s bounty – fresh tomatoes, cucumbers, peaches, and the like. I am buying up more than I can reasonably consume each weekend. While I am always ready for autumn’s cooler temperatures, It always seems that my favorite summer produce is gone all too soon. I am trying to enjoy it in every way possible before the season is over.

I’ve already enjoyed (and blogged about) peaches several times this summer. I’ve put them in scones. I’ve made jam. But I’m not done with them – I keep buying them just to eat out of hand (I have eaten 1-2  a day for weeks now!). I thought we needed one last peach recipe, because honestly, there can never be too many.

So when tacos appeared on the menu at our house the other day, and I knew there were quite a few peaches left to eat, I threw together this salsa with what I had on hand. With the freshness of the vegetables and fruit and the brightness of the herbs, it turned an ordinary (kid-friendly) taco night into something delicious and special. This salsa would taste lovely with a lot of different dishes – in a salad, over grilled chicken, fish, or pork, or even by itself, truly.

I am hoping to still see peaches this next weekend at the market, so I can enjoy this one last time before summer is on its way out.

End of Summer Peach Salsa
from Alta at Tasty Eats at Home

2 peaches, diced
1 tomato, seeded and diced
1 T diced red onion
1 hot chile pepper, such as a Serrano or jalapeno, seeded and diced
6 large basil leaves, chopped
8 mint leaves, chopped
Juice of 1 lime
Salt to taste

Toss all ingredients together and season to taste. Place in refrigerator and allow to the flavors to meld for about 30 minutes. Serve.
