Yet another week of fabulous food made healthier – and if you missed last week’s event you simply must go back and browse the submissions. With 40 healthier recipes, it was the best week yet.
Healthier Highlights
There was a little of everything…
For breakfast, try a Spiced Apricot-Cashew Smoothie, Flourless Quinoa Pancakes, or add this Healthy Homemade Granola to your morning yogurt.
For lunch or dinner, you can have poached or grilled salmon – both divinely perfect. If you’re going meatless, try this black bean burger.
I know you’ve still got room for dessert, and even if you don’t you’ll want to at least take a bite or two of this smooth, frosty Mojito Frozen Yogurt or a warm, soft Chocolate Chip Blondie.
For those of you wanting to stick strictly to the “Slightly Indulgent” way of eating, check out these great tips for baking with applesauce at Finding Joy in My Kitchen.
My Submission
Chewy Chocolate Vegan Date Brownies…just in case you haven’t seen them yet. They’re earthy, sweet, and healthier too. I actually just ate two (ok, three…) out of my freezer stash. I’m having one of those eternally hungry days where I can’t get enough to eat. These actually satisfied me. Thank goodness that the beast has been tamed – at least until next time.

I tried your chewy chocolate date brownies on Sunday and followed them exactly as the recipe says. It was one of those recipes that I just couldn’t wait to try; literally. Oh boy… are they amazing! Half the pan is gone already, the rest are in the freezer waiting to be devoured (the semi frozen ones are the best by far I think!). So thanks! (Although, now I have to figure out how I’m going to exercise the pan off… haha)

I linked up Chocolate Zucchini Bread, which I made healthier by using healthy oils, some applesauce, and mostly palm sugar. One reader used the same recipe, leaving the zucchini unpeeled and making muffins. She said her family enjoyed them, so they are already reader tested!

Love your website and recipes! Also, for a quick gluten free, sugar free treat theres Gudernoobs made by WooHoo Foods. High in omega-3s too. You’d never guess that they’re actually good for you. But I love baking so I’m going to make your Zucchini Bread!

The brownies are on my list for indulgent rewards for good behavior. My risotto cakes have the crunch and creaminess that satisfy that love of fried food and carbs, but have little fat and lots of veggies included. I’m off to explore the rest of the recipes this week. Looks like I’ll find lots of inspiration. Your guest post will be on my blog in the morning. Thanks so much for the great advice.
