Welcome back to Slightly Indulgent Tuesday – another week of fabulous food made healthier. Sometimes I wonder if everyone doesn’t plan their submissions because every week there seems to be a theme.
Last Week’s Healthier Highlights
Zucchini muffins, mulberry & lemon polenta muffins, and strawberry blueberry honey oat muffins all said quite loudly that ‘Summer’s Here!’ We also had a couple fun cucumber recipes – cucumber mint granita and mahi mahi with cucumber-herb relish. It’s clear that everyone is making good use of their fresh summer produce.

I made pesto out of one of my favourite summer hits: garlic scapes!!!! Mmm, I grabbed them out of my veggie box delivery and couldn’t WAIT to make this pesto… it’s amazing and garlicky in just the right way!

Hey Amers! Thanks again for my wonderful healthy snacks to go prize! I am really loving it!
My recipe this week is based on the fact that we are right in the middle of raspberry season. It does contain maple syrup, but you can replace that with the sweetner of your choice if you are avoiding sugar. It also works well unsweetened for a tart/savory flavor. Enjoy!

So many delicious recipes this week! I’ve linked up some chicken, peach and sweet onion skewers. Cooked on the grill and topped with teriyaki sauce. All local ingredients!

OOPS. That’s not Summer Turkey Salad. It’s Herb and Rice Salad and a favorite from a post in April of last year. The Summer Turkey Salad is from last week if you’re looking for it. Lots of recipes to explore this week. Thanks Amy.
