Another week of fabulous food made healthier – any way you choose. This is my favorite post of the week because I get to see what you’ve been cooking.

Last Week’s Healthier Highlights
Everyone’s favorite solution-oriented gluten-free cook, Shirley from GFE, shared a grain free flax bread. I don’t need to eat grain-free but I love the idea of getting lots of omega-3 in healthier bread. If you didn’t see these beautiful gluten-free sandwich buns, you should stop by and check them out. I think they’ll be perfect for Fourth of July Cookouts.
Jamie made a dairy-free version of my Strawberry Orange Cornmeal Cakes – but used blueberries instead. Top a piece of this with some ice cream and I’d be in heaven.

Thanks for all the great links! I submitted my post wrong again. I was trying to submit it while calling out instruction to my daughter who is making gluten free shortbread as treats for the fairies. As a sidenote, she has totally lost respect for my baking skills after seeing how easy it is to make shortbread. Should never have taught her!

Lots of wonderful stuff going on as usual! I linked up a guest blogger’s recipe–Polka Dot Chocolate Cake with Chocolate Almond Butter Frosting from Starlene over at GAPS: A Food Experiment. Gluten free and refined sugar free, this cake can also be made dairy free easily. Using both almond flour, almond butter, and sliced almonds, this recipe is an indulgence, but a healthier one.

GNOWFGLINS course is wonderful! I recommend everyone join her course and pay what they can. She could easily charge $100+ for her course.

This week, I decided I wanted to try Elana’s chocolate chip cookies with almond flour. They were awesome. I am so happy to have this recipe in my arsenal. So is my husband. He was very happy about them.
BTW, I got some palm sugar and tried it homemade ice cream. It was really good. I am looking forward to trying it in more ways. Thanks!

@Tia, I’d love to see how you used palm sugar in the ice cream – I’ve tried it and haven’t been too crazy about the hard as a rock texture I get. Maybe you know a trick I don’t.

Well, I guess I cheated a little. It was chocolate ice cream, so we used chocolate syrup, which has regular sugar. But the extra 2 tablespoons of sugar it called for we used the palm sugar, and it tasted great. Plus, we used our cuisinart ice cream maker. Maybe that makes a difference.
