    This week I am sharing my take on a skillet cookie, which is cookie dough baked in a cast iron skillet! I love it because it’s faster, easier, iron-rich, and you can cut the cookies into wedges. You can even eat a wedge warm with a scoop of ice cream on it. Yum!

    I shared my recipe for Molasses Spice Granola. It has a lot less sugar than traditional granola does and is an awesome munchy! Plus, I added some ground chia seeds in there for extra benefit. :) Thanks for hosting!

    I’m so glad it was a success…but how could it not be! I hope to attend one day. Congratulations Amy!!

    This week I am sharing another 3 recipes: soup, salad and dessert. Ah, the perfect dinner lineup!

    (1) A radicchio salad with warm fennel and apple topped with fresh squeezed orange juice (SCD Friendly)

    (2) And roasted cauliflower soup with curry and coconut (Vegan, dairy free, gluten free, SCD, ACD).

    (3) Key Lime Pie (dairy free gluten free, cane-sugar free, SCD)

    Perfect!
