Back to School
I started school again today – last 8 weeks I got a 4.0. Yep, this gluten-free, sugar-free gal got a 4.0 in Pastry Arts School. And, oh, how I miss my Breads & Rolls class. I’ve been reading everything I can about bread baking & making gluten-free loaves ever since.
This 8 weeks I’m taking Cake Decorating 1. I don’t know this class will stir my soul the way Breads & Rolls did…only time will tell.

i linked a dairy free caramel recipe! which i am not sure qualifies as healthier, per se, but dairy free was kinda of exciting for my sister

Congratulations, Amy! I linked up my lemon yogurt soufflé loaf, served with blueberry coulis, but I could only fit in the first three words! It’s not technically a soufflé, I think, but it is similar to one. Anyhow, it’s a lovely, light dessert and everyone who has tried it really likes it.

I linked up a carrot apple muffin recipe that is healthier by having no oil, only egg whites, and uses whole wheat flour. They taste wonderfully indulgent however.

Hi Amy. Congratulations on your 4.0. Your hard work and dedication paid off big time! You are such an inspiration. On another note, the whole fiber issue has been on my mind since I started eating wheat free. Would you consider doing another post on that subject. I tend not to eat many carbs at all and get any fiber from fruits,vegetables and raw nuts. Maybe I am not as deficient as I think, but it does concern me. Thanks for considering this request. You are greatly appreciated.
