Today is actually 7 years living gluten-free and sugar-free for me! Slightly Indulgent Tuesday & last week’s healthier highlights are the perfect way to celebrate.
Last Week’s Healthier Highlights
- Grain-Free Lemon Coconut Cookies from Affairs of Living
- Triple Lemon Pie from Healthy Green Kitchen
- Blueberry Chai Pudding from Creative Juices for Decor
- Cranberry Almond Bittersweet Chocolate from City | Life | Eats
Holy Moly!!
I have been waiting as patiently as I could to share this with you…a few weeks ago a reporter from The Daily contacted me and asked for a “How to eat healthier” quote. Of course, I obliged. But when she sent me the published article, I nearly fainted.
Yes, that’s me being quoted along side Mark Bittman, Joy Bauer, Katie Lee, and Susan O’Brien.

I’m still shocked…anyone who reads the article will wonder who Amy Green is.
If you have an iPad, you can download the free app for The Daily. (No, they didn’t ask me to tell you about the download…just thought you might want to check it out. The Daily is the a lot of fun.)
Linking Up Guidelines: PLEASE Read!
- Please link back to this post so that your readers can find the recipes here.
- Link to your individual post, NOT your home page.
- Recipes DO NOT have to be sugar-free or gluten-free – just healthier in some way. The idea is to share our ideas and inspire each other in the kitchen.
- Please don’t link give-aways and book reviews without recipes or contests – the intent of this event is to compile recipes that give people options.
- ONLY ONE post per blog, please!
- (Optional) When you link, please tell us who you are and what you’re cooking. For example, I might enter:

Congrats again, Amy! Fabulous. But who is this Mark Bittman fellow? Never heard of him. I bet he’s thrilled to be quoted on the same page as YOU.

@Ricki, You’ve got to be kidding…Mark Bittman has written so many cookbooks – and some of them weight 5 pounds. He has an entire on-line following that blog about his recipes. Google him. He’s huge.

Well, *maybe* there is a *slight* chance I might have heard the name mentioned somewhere or other. . . hmmmm!
But seriously, he should be the one who’s thrilled to be quoted alongside Amy!

Congrats Amy. How so very exciting
And thank you for the shoutout for the chocolate.
I am submitting a Vegan Cannellini Gratin – it tastes buttery and delicious, but most of the fat in the dish is from sesame seeds as opposed to oil.

Congratulations!! You have come so far in such a short time of blogging- how incredible! You should be really proud of yourself, not to mention the fact that you help so many people to eat more healthfully!!
I’m linking to a crunchy, portable granola-esque snack this week. Sweet, but still low-glycemic, gluten-free, dairy-free, corn-free, egg-free and can even be nut-free if you use sunbutter.
These are perfect for lunchboxes, the gym, and picnics. I’m really excited to have another “go to” snack without resorting to Lara Bars!! LOL

@Chickiepea’s Blog: Eating for Autoimmune Health, Love your portable snack idea! It’s always good to have something on hand to grab-and-go. Mine is an apple and some almonds…it’s quick and simple and will put the hunger at bay when I’m out and about.
Hugs!

I’m submitting my baked French toast with almond butter and bananas. It’s gluten-free, dairy-free, and can be made sugar-free as well. It’s so yummy there’s no need for syrup or powdered sugar.

Have you tried the Chia seed flour? It’s like wheat flour, but gluten-free, its flavor is completely normal. You can substitute regular flour in recipes like cake, cookies or muffing. I used this product and recommend it 100%, my kids love cookies and brownies. This is a very good product for the whole family. There are many articles on You Tube for preparing all kinds of recipes (Nuchia Food) is an excellent product that offers Nuchia Foods. http://www.nuchiafoods.com

Meanwhile, I made these goodies and they are terrific! I didn’t have almonds on hand so spread a thin layer of almond butter on the inside of the date and used almond flour. Think the almond butter kept everything stuck togther. Even the crw working on my house reno loved them! Well done you.
