		<description>I&#039;ve iinked my chicken enchilada casserole dish. It&#039;s gluten free and uses less cheese than most similar recipes. Overall I think it&#039;s pretty healthy and it&#039;s often requested by family members--even cousins. It&#039;s easy, too, despite what seems like a longish list of ingredients and directions.

But I&#039;ve since learned how to bake and cook with healthier gluten free flours. These pancakes are an example. They&#039;re delicious (especially with the bananas and pecan on top) and made with some high protein flours! Throw in a cup of coffee or tea, and I&#039;m in heaven!</description>
