Another week of fabulous food made healthier! Last week we had another fabulous turn out. Again, I’m so grateful for your participation. I get wonderful feedback from readers and other bloggers – it’s good to know that people enjoy sharing how they make food a little bit healthier.
My Submission
Yesterday I posted Pulled Barbecue Chicken on gluten-free sandwich bread. I’ll post the sandwich bread recipe later this week. This loaf actually holds up to good, old fashioned barbecue.
The chicken is so moist and perfectly flavored – I would have loved to top it with cole slaw. Taking the time to make cole slaw would be a luxury right now, though, so thinking about it will have to be good enough.
Last Week’s Submissions
We had some new bloggers link up, which always makes me smile. I couldnt’ help but notice a post from my good friend Chelsey about How to Make Almond Flour. There were two posts about my favorite healthy grain - a quinoa taco salad and a quinoa & millet pilaf. Who knew that such a tiny grain can be a complete protein, stacked with nutrients, and taste so good.
