Can you believe it’s almost Christmas? Time does fly by!! I’m fully regret that I haven’t had enough time to bake this holiday season because I’ve been working on my book. I spent the entire weekend going through my editor’s notes and making minor changes. It’s coming along beautifully.
I’m so excited for you to see it – not much longer until it’ll be ready. Enough about me…

This week I am sharing my recipe for a Pumpkin Cake that you make in your blender! I’m serious- you just place all of the ingredients in the blender jar and blend, then add to some beaten egg whites and bake!
This recipe is gluten free but can be made with “regular” flour if you don’t have an issue with gluten.
If you like this recipe, I also use the same concept for a Coconut Cake that is posted on my blog too.
