
Thank you for coming back for another week of healthy recipes! Just to clarify – recipes don’t have to be gluten-free, vegan, dairy-free, refined sugar-free, or fit any particular diet. Slightly Indulgent Tuesday is all about celebrating healthier food of all types. We can all inspire each other.
So, link up your healthy recipe. And healthier is defined by you – it means something different to everyone at different times in your food journey.
A Little Update…
I actually took the week off – I didn’t mean to but Joe had 4 days off. We were having so much fun together that I just couldn’t turn on my computer. After I cooked a huge Thanksgiving meal, we got to hang out, watch movies, play his X-Box, work on the nursery, and just enjoy being together. It was kind of like we were dating again…you know, all fun and no business?
I’ve also been working on some Christmas cookie recipes (can’t wait to share!) and I have a couple other dishes ready to share with you. It’s that time of year when I’d rather be in the kitchen than doing anything else.

Thanks for hosting, Amy! I pretty much took the weekend off from turning on my computer and it was a very nice break. But back into the bustle of it all this week. I have shared a post of 2 Pumpkin Cookie Recipes. Recipe 1 is free of dairy, egg, soy, peanut/nuts and has a freezer option. Recipe 2 is free of gluten, dairy, egg, soy, corn, peanut/nut. They were a hit at our home. I hope your readers enjoy them as well.

I made eggnog for breakfast this morning (sans alcohol, no worries), and it was a fabulous, festive, nutrient-dense drink to have first thing in the morning. You can make this traditionally with a garnish of nutmeg and a cinnamon stick, but also use for making eggnog ice cream, eggnog smoothies (blend with ice), eggnog lattes (blend with ice and coffee), or just a simple coffee creamer. My link today is for Marshmallow Crispy Treats Dressed Up a Little — it’s just an easy family-pleasing treat that I haven’t been able to eat for a long time, except that now there is a gluten-free crisp rice cereal by Kellogg’s. I just had to make some this once.

Today I have a duo of fudge recipes that are made from wholesome honey and coconut. But they aren’t ordinary! The Chocolate Peppermint Fudge is absolutely divine, and the Coconut Citrus Fudge is so light and clean. Perfect for the holidays, and perfect for getting more coconut oil into your diet.
