Hi Amy — here’s my version of Baked Butternut Squash with Apples-Walnut-Cinnamon Stuffing. It’s gluten-free, egg-free and meatless. Because it uses agave nectar and apples for sweetening, it’s also low glycemic and can easily be casein-free, too.

Amy I haven’t commented on your blog before but it is one of my favorites for gluten-free sugar-free baking–I’ve been a subscriber for several months (a different email address)! I refer a lot of patients/friends/family to your site and I’m so glad you have it! I’m newly vegan (for health reasons) and love that you found that #27 recipe for pumpkin bread! I’m completely going to try that–I’ve been looking for something for Thanksgiving. Please let us know if any other vegan recipes come up! PS–Congrats on your weight loss–I too have lost weight going gluten-free & more (100lbs) & its great to see someone else changing their life through healing with food (the main topic of my blog:-))

I’m getting this in a little late. (We’ll call this one Slightly Indulgent Wednesday!) But I had great fun modifying my Pumpkin Dessert to be gluten-free, dairy-free, and refined sugar free.
