This week I’ve shared my video on how to choose and cut a pineapple. I’ve found it to be a foolproof way to know when a pineapple is perfectly ripe. It’s the quickest and simplest method for cutting a pineapple. Thanks for hosting!

Made the coconut cookie cutouts and the whole family liked them. I did not add anything to the middle and sandwich or thumbprint. Just made them as drop cookies and used a flat meat pounder to press w/parchment to 1/4″ and baked. YUMMY!

I’m working on cooking a paleo diet more often, so I made my latest post — Roasted Chicken Breasts — both GF and paleo. Some of the paleo recipes I’ve found are really a good fit with what works for me.
