    I’ve never learned to poach eggs. We’ve always had an egg poacher of some sort =D. I love the flavours in this. Curry, tomatoes, eggs, quinoa, YUM!

    I finally learned to poach eggs after many failures and the purchase of an egg poacher. What I do is take a shallow non-stick skillet/frying pan and put about 2 inches of water in it. Crack eggs into individual little bowls. Bring the water to a simmer, and slip eggs in. I suppose because the eggs practically touch the bottom of the pan and are just barely covered with water, they don’t dissapate as much. Anyway – this dish sounds INCREDIBLE. I love eggs and tomatoes. Yum.

    This sounds delicious Amy. I absolutely love poached eggs, but I cheat and use silicone poach pods. They work great.

    This is an awesome dish! I make something very similar for breakfast pretty much everyday – it is so filling! I love your tomato curry sauce- makes for a wonderful dinner entree!

    I made this today and it is good. I tossed some sautéed asparagus in and a glob of plain yogurt on top. I always have the ingredients on hand and so I would surely make it again.

    I made this last night and it was delicious! I mixed some spinach in with the quinoa (the store was out of kale) and it was super hearty. I don’t normally like eggs, but a runny egg oozing out over top of the tomatoes, quinoa and spinach was just perfect. I’m a new convert to the gluten free, unrefined sugar diet and recipes like this make it easy!
