Hey, the students even ate these! Nicely done for a raw treat. You make healthy look and taste good.

If you are a chocolate fan you can add chocolate cocoa powder to the ice cream layer (you may need to increase the liquid depending on amount of cocoa added). I make a similar concoction I call chocolate mousse. Love the idea of the cookie layers! Thanks

Lauren, what a great idea. I wish I could make these but I am allergic to avocado. Any subs for avocado? Peaches?

@Anna@Green Talk, I’ve actually heard that papaya makes a creamy, neutral-tasting filling! Or perhaps bananas?

These look great but what would be a great substitute for the avocado? I have an allergy to them.

    Lauren Reply:

@Melissa C., Hi Melissa, you might try bananas? There really is no equivalent substitute for them. Sorry!

@Melissa C., I bet you could try frozen bananas. You’d have to play around with the recipe a bit but it would be delicious.

Yum, I’m going to have to get back into the habit of buying dates so I can make recipes like this one. :) Thanks for linking to Healthy 2Day Wednesdays!
