I use a 7 quart size, and since I wrap it warmly with a towel, and put warm/hot water in the crock it just sits and cultures, simple and perfect every time for me, you may have had the water in the crock too hot, not sure.  it does matter if the cover is on straight and tightly though, you want the heat to be held in the pot.</description>
