    Sounds like you had a lot of fun! I saw Rick Bayless do a cooking demo once, and he seemed like a super nice guy!

    Great review!
    The Manhattan chili sound good. Wish they were closer! As for Shirley’s enchilada recipe, I might have to make that (veggie) as I have a bunch of Sandwich Petals in my freezer. Yum!
    And that was totally cool that you got to meet Rick Bayless and TALK to him. I never got to go to his Chicago restaurant when we lived there. Boo. As for his cookbooks, do happen to have his Everyday Mexican cookbook too? I have been thinking about getting that one and was wondering which one you might think was better.

    I was happily scrolling along enjoying the wonderful, healthy foods you highlighted and then saw my own name. Stop. Read again. Amy, you are just too kind on that shout out! I owe that mention on their site to Ginger over at Gluten Free in Florida … Finally. :-) And, I think it would be wonderful with veggies, Renee. Zucchini, yellow squash, mushrooms, and more. ;-) Last, Amy, you met some of the folks I’d really like to meet like Jen Cafferty!

    @gfe–gluten free easily, Jen is so down to earth and kind. She even invited me to walk through the show with her for a while. I had to meet some of the people I was traveling with so I couldn’t but her generosity of spirit is incredible.

    We need one of the in Dallas/Ft Worth area. Our family is just getting familiar with glutten-free. My daughter recently found out she is a Celiacs. That would have been nice to know for the last 15 years! Her symptoms started in puberty but we didn’t know that was her problem. We have spent 15 years trying to figure it out….the symptoms were so varied…from infertility….thyroid…IBS..etc. Anyway, it is a hard adjustment.

    I don’t need to eat gluten-free food, but I still like reading your posts because, well, I could eat a little healthier. Reading about it is the first step, right?

    I saw those falafel chips today, too! I didn’t get a chance to take a closer look, though, but now that you’ve mentioned it, Amy, I’m interested in trying them.

    “Using sugar in your chili is cheating.” I second that! Sugar is added to far too many things, and too much of it, even in things that really don’t need it – like chili. :) (Speaking of which, I have a really good chili recipe. I should make it sometime and blog it.)
