    I love one pot meals too, this sounds lovely! So, meatless, huh? I’d love an update on your eating style and reasons for changing…also post-pregnancy update on baby weight and exercise too. :o )

    @Andrea, Oh – I can do that. I am almost back to pre-pregnancy weight – the only reason I’m not worried about the last 5 or 8 pounds is because we would love to have #2 soon. If we can. I think it’s better to have a little more meat on my bones for that. Exercise…ugh!! Anyway, I will post about it soon.

    Meatless…will add that in too.

    Quick meals are worth their weight in gold!! About the shows….my kids loved those baby Einstein movies and I swear they learned so much. If they are watching something, it may as well be those!

    Love the idea of adding brown rice (or maybe quinoa/) to the pot so that it becomes a one pot meal. How did you make it work? Should we put in enough stock for the rice to cook and then put the meat on top? I worry that would make the meat boil rather than bake. thanks for your help!

    @Saranam, Oh, we can do meat and veggies and call it a meal. I just add one cup rice and two cups stock when I add rice. I mentioned in the post that the meat should be well-marbled because it is better for slower cooking, like this method. If you have a really lean cut it might turn out tough.

    This combination sounds irresistible and you make it all sound so easy! I also love that you provided a few other ingredient combinations for easy one-pot meals on the fly. (BTW, this would make a great contribution to this month’s Shine Supper Club!)
