These aren’t your average rice crispy treats. I’ve been told by my husband’s office that I should keep the recipe all to myself and sell these cookies.
Yea.
They’re that good. My hubby’s co-workers didn’t know that these cookies are healthy, either.
This healthy rice crispy treat recipe combines gluten-free organic brown rice cereal, gluten-free quick cooking oats, and flaxseed meal to make a cookie that’s crunchy, chewy, and fits in a healthy heart diet too.
I’m in the process of doing lots of healthy eating research along with some deep soul searching. Being a mom has changed my whole perspective on life, and that includes the way I feed my family.
I was a chunky kid who had a very strong affinity for anything sweet. (Some things never change…) I loved fat too. Cheese. Butter. Extra creamy ice cream. And let’s not forget the carbs. Bread. Pretzels. Pizza.
It was the 80’s and processed food was in style. Dinner from a box. Frozen meals. Fat free anything. So was that butter you could spray. Yuck.
I’m grateful today that real food is trendy.
You’ve got to try these rice crispy treats – they’re the perfect way to balance out all of the Halloween candy. And you don’t even have to to turn on the oven.

Note: I am a Brand Ambassador for Attune Foods. This post is sponsored by Attune. Truth be told, I loved their products before I started working with them. Their gluten-free, refined sugar-free, GMO-free cornflakes got me through the first several months of my pregnancy when I could rarely stomach anything else. So, you can rest assured that I am sharing my honest opinion of their products.
Come on – let’s mix up some healthy cookies!

Hi Amy,
These look delicious! And I love that they are easy to make nut-free since our school is a nut-free school. Thanks for sharing! How are you doing?
Best,
Abbie

@abbie, I am good – tired but good. I think that’s part of motherhood, huh?
Most schools are nut-free now, aren’t they? It’s a good thing.
How are you?
xoxo

Super recipe Amy! Love the idea of taking a standard ‘treat’ that everyone knows and quite a few people love, and making it better tasting AND healthy too. Love to see more like this.
