It’s winter, which means there is often a pot of soup cooking away on my stove top. Meaty, vegetarian, vegan. We love them all. I like to make a double batch and freeze half for a night when I’m too busy to cook.

I’ve tried red lentil soup many different ways but I didn’t fall for it until I added sweet smoke Spanish paprika. The flavor adds the perfect amount of depth.

I haven’t been able to find sweet smoked Spanish paprika at your run-of-the-mill grocery stores. Instead, I’ve found it in specialty stores with a bulk spice section. I also picked up some hot smoked Spanish paprika with is just as divine. If you happen to see both, pick them up.

If you happen to live in an area that doesn’t have specialty stores, or you’d rather have it delivered to your door, Amazon has a slew of different brands of paprika.

It’s Fall! That means it is a great time to try new recipes with the beautiful fall produce. If you’ve never tried butternut squash before, you really should give it a try. Squash is meant for far more than just decoration!

I’ve been making butternut squash for Nate. He likes it best when mixed with a little coconut oil and pears or applesauce. He loves pumpkin, though. Note to mommas: A few bites is more than enough! Pumpkin puree is so high in fiber that it can really bind up the digestive system.

Winter squash is one of my favorite fall foods not only because it tastes great but because it’s high in vitamins A and C, fiber, and even has some omega-3 fats. Who knew?

You know how you get a recipe in your head and you want to make it. You really do. But somehow you just never get around to throwing the ingredients together? That’s exactly what happened with this creamy zucchini soup. Zucchini season has come and gone twice. Each time I thought about making this soup. I didn’t get much further than that.

Finally. This year I made the soup. It was worth the wait.

We like zucchini at our house. It’s kind of like all-purpose glue. You can use it to make just about anything. Cookies. Bread. Entrees. And, yes, soup. It will take on the flavors you choose. And, it’s got a silky-smooth texture when you whirl it in a blender.

It’s a simple recipe, and honestly, that simplicity is what makes it so good. Instead of sour cream or heavy cream, I used cashews to give it a luscious texture. I used my VitaMix to get the cashews to blend completely into the soup. If you don’t have one, try soaking the cashews for several hours or even overnight to soften them up.

When Nate was born, I started reading books about how to feed your kids well. It’s my current obsession. Can you blame me? I know how important food is to our health and I am completely determined to make sure Nate gets nothing but the best.

My favorite book so far is Disease-Proof Your Child: Feeding Kids Right by Dr. Joel Furman. He talks about eating a plant based diet – not vegetarian or vegan, but plant based because of the powerful disease protecting properties inherent in plants.

Yea, plants. Especially greens.

So, I’m slowly (very slowly) moving my diet to include more and more plant based foods. The truth is I’ve never loved cooking proteins. My favorite cookbooks are vegetarian. That kind of cooking has always appealed to me on a deeper level.

So, I thought I’d share some of the vegetarian meals that are already here at SS&GF.

Do you have any favorite vegetarian meals? I’d love for you to share them in the comments.
